Ingredients
  

For the gazpacho:

  • 2 ripe avocados, peeled and pitted
  • 1 medium cucumber, peeled and chopped
  • 1 small clove garlic
  • 1 green onion or small shallot
  • ¼ cup fresh parsley (or a mix of cilantro and basil)
  • 2 tablespoons lemon or lime juice
  • 2 tablespoons olive oil
  • 1¼ cups cold water or vegetable broth
  • Salt and black pepper, to taste

Optional add-ins:

  • ½ jalapeño (for spice)
  • Handful of baby spinach
  • 2 tablespoons plain yogurt (for extra creaminess)
  • 2–3 ice cubes (for lighter texture)

For toppings:

  • Chopped fresh herbs
  • Diced cucumber or radish
  • Olive oil drizzle
  • Croutons or crushed nuts
  • Yogurt swirl (optional)

Instructions
 

  • 1. Prep the Ingredients
    Peel and chop the avocado and cucumber. Roughly chop herbs and other ingredients.
  • 2. Blend It All Together
    In a blender or food processor, add avocado, cucumber, garlic, onion, lemon juice, olive oil, herbs, and water or broth. Blend until smooth and creamy.
  • 3. Adjust the Flavor and Texture
    Add more liquid if needed to thin. Taste and season with salt, pepper, or more lemon juice as preferred.
  • 4. Chill the Soup
    Transfer the gazpacho to a bowl or container. Chill in the refrigerator for at least 1 hour for best flavor.
