Ingredients
  

  • 4 cups seedless watermelon, cubed and chilled
  • ¾ cup feta cheese, crumbled
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon olive oil
  • tablespoons balsamic glaze (or more to taste)
  • Pinch of salt
  • Pinch of black pepper

Optional Add-ins:

  • ½ cup cucumber, thinly sliced
  • ¼ cup red onion, thinly sliced
  • `1 cup baby arugula or spinach
  • 1 tablespoon toasted pumpkin seeds or chopped pistachios

Instructions
 

  • Prepare the Watermelon:
    Chop cold, seedless watermelon into bite-size cubes and place in a large salad bowl.
  • Add Feta and Mint:
    Sprinkle the crumbled feta and chopped fresh mint over the watermelon.
  • Drizzle and Season:
    Add olive oil, a small pinch of salt and pepper. Mix gently to avoid breaking the feta too much.
  • Finish with Balsamic Glaze:
