Ingredients
  

For the chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For the sauce:

  • ½ cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • For garnish:

    Fresh basil, chopped (optional)

Instructions
 

  • Cook the Chicken:
    Heat olive oil in a large skillet over medium heat.
    Season the chicken breasts with salt and pepper.
    Cook the chicken for 5-7 minutes on each side, or until golden brown and fully cooked through.
    Remove the chicken from the skillet and set aside.
  • Make the Sauce:
    In the same skillet, add a bit more olive oil if needed.
    Add the minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant.
    Pour in the chicken broth and heavy cream, stirring to combine.
    Bring to a simmer and let the sauce cook for 3-4 minutes.
  • Finish the Sauce:
    Stir in the Parmesan cheese and cook until the sauce is smooth and creamy.
    Season with salt and pepper to taste.
  • Combine and Serve:
    Return the chicken to the skillet, spooning some of the sauce over the top.
    Let everything simmer together for 3-4 minutes to allow the chicken to soak in the flavors.
    Garnish with fresh basil if desired, and serve immediately.
