Prepare the Chicken:Pound chicken to even thickness if needed. Season both sides with salt, pepper, and optional garlic powder or Italian seasoning.
Cook the Chicken:Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 5–7 minutes per side, until golden brown and cooked through (internal temp: 165°F / 74°C). Remove from heat.
Add Cheese and Tomatoes:Place mozzarella slices on top of the chicken. Add sliced tomatoes around the chicken. Cover the skillet and let sit for 2–3 minutes until cheese is melted.
