Ingredients
  

  • 1 cup rolled oats (or oat flour)
  • 1 scoop vanilla protein powder (about 25g)
  • 2 large eggs (or 3 egg whites)
  • ½ cup Greek yogurt (or cottage cheese)
  • ½ cup milk of choice (dairy or plant-based)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 cup fresh or frozen blueberries
  • 1–2 tablespoons honey or maple syrup (optional, for sweetness)
  • Oil spray or butter, for cooking

Instructions
 

  • Blend the Batter:
    In a blender, combine oats, protein powder, eggs, Greek yogurt, milk, baking powder, vanilla, and cinnamon. Blend until smooth and creamy.
  • Add Blueberries:
    Gently fold in the blueberries using a spoon. Don’t blend them, or the batter will turn purple.
  • Cook the Pancakes:
    Heat a nonstick skillet or griddle over medium heat and lightly spray with oil. Pour about ¼ cup batter for each pancake. Cook for 2–3 minutes until bubbles form, then flip and cook another 1–2 minutes until golden and fluffy.
  • Stack and Serve:
    Stack the pancakes on a plate and top with extra blueberries, honey, maple syrup, or nut butter. Serve warm and enjoy!
