  • 4 boneless, skinless chicken breasts
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 ripe mangos, peeled and diced
  • 1 small red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 small jalapeño, chopped (optional)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions
 

  • Prepare the Chicken:
    In a bowl, mix together the lemon juice, lemon zest, olive oil, minced garlic, thyme, oregano, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 15 minutes (or up to 1 hour for more flavor).
  • Grill the Chicken:
    Preheat the grill to medium-high heat. Grill the chicken for 6–7 minutes per side or until it reaches an internal temperature of 165°F (74°C). Let the chicken rest for 5 minutes before serving.
  • Make the Mango Salsa:
    In a bowl, combine the diced mango, red onion, red bell pepper, jalapeño (if using), cilantro, and lime juice. Season with salt and pepper to taste.
