Ingredients
  

For the skewers:

  • 1½ lbs (680g) boneless chicken breast or thighs, cut into 1-inch pieces
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into chunks
  • Skewers (wooden or metal)

For the teriyaki marinade:

  • ½ cup teriyaki sauce (store-bought or homemade)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • ¼ teaspoon black pepper

Optional garnish:

  • Chopped green onions
  • Sesame seeds
  • Extra teriyaki sauce for drizzling

Instructions
 

  • 1. Marinate the Chicken:
    In a large bowl, whisk together teriyaki sauce, soy sauce, honey, garlic, lime juice, olive oil, and pepper. Add chicken pieces and toss to coat. Cover and marinate in the fridge for 30 minutes (or up to 4 hours for more flavor).
  • 2. Soak Skewers (if using wooden):
    While the chicken marinates, soak wooden skewers in water for at least 20 minutes to prevent burning.
  • 3. Assemble the Skewers:
    Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating ingredients for color and flavor.
  • 4. Preheat Grill:
    Heat a grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
  • 5. Grill the Skewers:
    Place skewers on the hot grill. Cook for 12–15 minutes, turning every few minutes until chicken is cooked through and lightly charred. Baste with extra marinade if desired (discard any marinade that touched raw chicken).
  • 6. Serve and Enjoy:
    Remove skewers from grill. Garnish with sesame seeds and green onions, and serve hot with rice, salad, or grilled veggies.
