Ingredients
  

  • 4 medium zucchinis, halved lengthwise and scooped
  • 1 tablespoon olive oil
  • 12 oz (340g) Italian sausage (mild or spicy), casing removed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup tomato or marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or Italian cheese blend
  • 2 tablespoons grated Parmesan (optional)
  • Fresh parsley or basil, for garnish (optional)

Instructions
 

  • Prep the Zucchini
    Slice zucchinis in half lengthwise and scoop out the centers with a spoon, leaving a 1/4-inch border. Lightly brush with olive oil and sprinkle with salt and pepper.
  • Cook the Sausage Mixture
    In a skillet over medium heat, cook the sausage until browned. Add diced onion and garlic and sauté until softened, about 3–4 minutes. Stir in the tomato sauce and Italian seasoning. Simmer for 2–3 minutes.
  • Stuff and Grill
    Place zucchini halves cut-side up on a grill-safe tray or baking sheet. Fill each with the sausage mixture and top with shredded cheese and a sprinkle of Parmesan (if using).
  • Grill or Bake
    Grill over medium heat (covered) for 10–12 minutes, or bake in a 400°F (200°C) oven for 15–20 minutes until zucchini is tender and cheese is melted and golden.
  • Serve and Enjoy
    Top with chopped parsley or basil, if desired. Serve warm as a main dish or pair with your favorite side.
