  • 4 chicken breasts or thighs (boneless or bone-in)
  • 3 cups of mixed vegetables (carrots, bell peppers, zucchini, etc.)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder

  • 1 teaspoon dried rosemary or thyme

  • Salt and pepper to taste

  • Optional: Lemon wedges or grated cheese

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
