Ingredients
  

For the salad:

  • 6 cups fresh baby spinach
  • 1½ cups fresh strawberries, sliced
  • ¼ small red onion, thinly sliced (optional)
  • ½ cup crumbled feta or goat cheese
  • ½ cup sliced almonds or pecans, toasted
  • 1 avocado, sliced (optional)

For the poppy seed dressing:

  • ⅓ cup mayonnaise or Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppy seeds
  • Salt and black pepper, to taste

Instructions
 

  • Make the Dressing:
